Ingredients

Ingredients:

50ml fresh apple infused Rum

25ml fresh lime juice

5ml lime husk cordial

20ml apple skin syrup

 

To make infused Rum:

Ingredients

500ml Rum

5 locally harvested organic apples

Lime Husk Cordial

Ingredients:

10 limes juiced, keep the husk

1kg sugar

500ml of water

40gr citric acid

Juice the lime but keep the husk.

 

For the syrup: 

Skin of 5 apples

200ml Sugar Syrup

Introduction

This drink is perfectly refreshing as an aperitif and uses every part of the fruit. A great way to use a harvest from apple trees; you could make this as the apples fall and the gin will last all year round. The Apple Syrup will last well if kept in an air tight container and can be used on desserts and as any cordial with soft drinks.

Method

To make infused Rum:

Use a bottle of your favourite Rum and place in a sous vide bag that is suitable. Deskin (leaving to one side) and cut up five apples into cm square pieces. Add to the gin to sous vide for 24 hours. Strain the Gin back into the bottle once this time is over.

Lime Husk Cordial:

Use the husk for to make a lime husk cordial. Put the husk in a pan with all of the ingredients and heat until it reaches 60°C. Remove from the heat and remove the husks directly (to remove any bitterness) and let it cool, once cooled use fine strainer to strain into a bottle.

For the syrup: 

In a Vitamix blend 200ml of  2:1 sugar syrup with the skin of the apple until everything is mix together. And fine strain.
